For the lowest rolling resistance possible on a mountain bike, you want a tire as narrow as possible, like this one: http://www.specialized.com/bc/SBCEqProduct.jsp?spid=26488

It's a 26"-diameter x 1 inch wide high-pressure tire, which is pretty darn narrow for a mountain bike. However, not all stock MTB 26" rims can take tires that narrow, so take the bike to a bike shop and ask first.
