Riding in Temperatures 40-60F

I am planning a a three week trip of daily bicycle rides of 40 miles
at a very casula pace. The weather at this time of year will be about
55-60 F in the day and 40-50 F at night. It will be very windy. Will
sneakers be ok or could my feet get cold after a few hours? What
wouild be the best way to dress for the day? How's this?:

1. Coolmax shirt
2. Light weight wind/water resistant jacket
3. Sporthill pants
4. Wool sock
5. Brooks sneakers

I will also take along a light fleece top, gloves and hat.
