Depends. In fine dining, 20%. Coffeeshop, 15%. And that's after taxes.

I am always looking for new dishes, and it outdoor cooking season.
Give it a post, I am sure I am not the only one who enjoys good-eatin'.
And yes your goose should always be fresh...
